Healthy Vegan Caesar Dressing

Everyone who goes vegan has that one thing they miss. Rather it’s poutine or croissants, chocolate or ice cream, there’s always the one thing. Luckily, in this day and age there is pretty much a substitute for everything.Β I learned this when going vegan, but sometimes the final product is just not worth the effort.

caesar.jpgMy one thing was caesar salad. I missed the garlic, cheesy, zesty taste and pretty much thought I was at the end of the road with this. Until now. The best part? This dressing is healthy AF! No cream, no cheese, no eggs. None of that nonsense. This dressing also has added vitamin b12 and does nothing but good to your digestion. The base, you ask? Tofu!

Don’t click away just yet though. I learned about making tofu caesar dressing through hot for food’s blog, and I adjusted some of the ingredients to match my liking. All you gotta do is throw everything in a blender and you’re good! This is what you’ll need to make it:

  • 1 block firm tofu
  • 1/2 cup water
  • 4 tblsp nutritional yeast
  • 5 cloves garlic
  • 1-2 tblsp garlic powder
  • 3 tblsp lemon juice
  • 1-2 tblsp maple syrup
  • 3 tblsp olive oil
  • Salt & Pepper to taste

From here you can add more or less of any ingredient to your liking. I like the sharpness of fresh garlic but I don’t want to burn my mouth so I use garlic powder to add more flavour. Consider this a base recipe and adjust to your liking. I also made a version where I added chipotle chilli powder, more maple syrup and fake bacon bits and it was delicious! Get creative with it.

This is something super easy to take as a lunch for work or even to a potluck to happily squeeze in your greens.   1. Sounds amazing! I will be trying this! Caesar dressing used to be my go to. I’ve been eating dry salads for almost a year because I just can’t find a vegan salad dressing that sits well with me!
